Ever Since I Had A Myotomy With Tupet Fundoplication For

Ever since I had a myotomy with tupet fundoplication for achalasia at St Mary's Hospital- Mayo in Rochester MN, (June 2013) , I have been having other GI issues. Chronic diarrhea and severe all over bloating without weight gain. I didnt even bloat during any of my 3 pregnancies. More recently, my esophageal spasms are back. I am in contant pain from either the diarrheah or the spasms. I know I need to go back to the Mayo, but that requires a full day and a lot of money so I am looking into my diet. the problem is, I cant find a connection!
I do avoid dairy, starch and carbonated liquids already. I stopped eating broccoli along time ago and I dont eat processed foods very often- I have a 13 year old with T1 diabetes so our diet is cleaner than most.
Most upsetting is the reaction I sometimes get when I eat the "wrong" thing. I literally get woozey and need to lie down. I instantly fall asleep for about 3 hours. Its as if my body shuts down and says it must reset. I am still trying to figure out what the food is that triggers that. I wonder if its over eating? they did take some of my stomach away when they lifted it up to the esophagus and resewed it.
Again, I am NOT gaining weight but I am getting very round! I am 5'4" and 126 lbs.
