Good Evening And Thanks For Being Here.....Story Is, I Am

Good evening and thanks for being here.....Story is, I am a retired nurse and have an MBA in Healthcare Admin....I gave it all up to live my bucket list and now working as a lead cook in a back country lodge in Alaska...I recently hired a new dishwasher and learned that he has Lupus...personally not a problem. My concern is when he has a flare up and open sores; how much could he contaminate food products, what I mush provide him in protective products....and if he can not work due to this process, also to protect my lodge and customers, would I be right to release him before any law suits develop? I know way too many questions, my major question is; when he has a flare up and open wounds would you want him in your kitchen? just answer that and I can justify my decision.
