I Have An Extremely Picky Diabetic Eater Who Needs More

I have an extremely picky diabetic eater who needs more potassium in his diet. The only foods high in potassium that he will eat are french fries and baked potatoes. I know he should eat little to none of these foods but would it be okay to feed him some when his leg cramps are particularly bad?
