Question : 48 hrs ago after a dinner of jambalaya, I had diarrhea and vomited first my dinner, then black thick liquid. I did have coffee earlier in day. This was a thin tar look with what looked like grounds. My esophagus was burning. We ere camping, nowhere to go. I took some of my husbands omeprazil that seemed to help. The diarrhea was normal in color. Had one more episode in early am, fever and slept hard. Had another omeprazil and we were able to drive 3 hours home. No further episodes. Slept for 10 hours with fever at the last 2. Not sure how high fever, heavy sweats. Once fever broke, I felt fine. Never had this happen before. Should I be concerned? Husband had same dinner, no problems.

Black vomitus can very rarely indicate blood but in this case, the color of the vomit is likely due to the coffee that you had earlier unless you have a prolonged history of severe gastritis or reflux.
The burning was due to inflammation of the esophagus and/or stomach which can occur due to infection or in persons with reflux history.
Food poisoning is the most obvious cause of your symptoms since they were so severely acute. It may not be the the jambalaya since it occurred 48 hours after you ate it. In the majority of cases of food poisoning, symptoms occur within a few hours to 24 hours ( though can occur days after in some, more common to occur sooner rather than later) and your husband, who ate the same meal, was not affected unless the meals were prepared separately.
Persons can respond to the presence of bacteria or viruses differently
The symptoms are not likely to repeat themselves once improvement has started to occur. Once there are no symptoms for at least 4 hours then you can start using dry foods such as toast, biscuits, plain rice. Banana is also recommended.
If these are tolerated then a wider variety of foods can be used.
