Hi,

Mayonnaise is rich in fat. So to answer your question directly, unsweetened mayonnaise will not alter blood sugar of diabetic patient to great extent compared to other sugary foods.

However on the long run, mayonnaise can add to body weight/fat which isn't good for diabetic control.

So a diabetic patient can have unsweetened mayonnaise once in a while, not frequently.
