I read your question carefully and I understand your concern.
I think that you can safely try Mucinex. It does not have any interaction with Donepezil.
It can cause some sedation in some patients but a mild one shouldn't be a problem.
It doesn't affect Alzheimer's in any negative way either, actually may even have some benefit as it is thought it may antagonize NMDA receptors like another class of ALZ drug, memantine (not that it is approved to treat ALZ or that I am suggesting it should be used for that purpose, mind you).
