This is an interesting question.
The egg is an egg, and cannot be replaced with anything else- it is the holder of life, it is pure protein and contains all the necessary components to feed all the cells in the body.

However there are articles that say that the egg can be replaced with 1/2 banana, flax seeds, 1 teaspoon of baking soda mixed with 1 tablespoon of white vinegar for 1 egg, and also in the supermarkets there should be Ener-G Egg Replacer.

Although logically speaking, it has different taste. Try though, and maybe works.

Can an itchy throat after eatting something with eggs in it be a symptom of an allergic reaction? Is that just a mild reaction and can just be taken care of with benedryl? A little while after she has eatten it it goes away. It dont get back just feels annoying for awhile. Does she need to stop eatting eggs all together?

It looks very much related to allergy and it is very mild.
Yes, it can be taken care by taking benadryl, or even nothing if she can manage it without...just because benadryl will make her sleepy the rest of the day.
If it gets worse, she needs to take it of course.

Also, allergies tent to get worse or better with the time. At some point she me have severe reactions. In this case, if she has toungue swelling, low blood pressure and skin reactions...she will need to use epipen.

I would say that she needs to avoid eating eggs when possible, because the more she stays in contact with them, then the more she may become hypersensitive to them.
