I read carefully all your concerns and I can say as follows:
1. It's true that long term use of omeprazole can cause magnesium deficiency and irregular heartbeat.
2. In rare situations famotidine( pepcid) may cause pounding heartbeat too. May be you are suffering drug side effects but to my opinion it doesn't seems to be related with allergic reaction.
To my opinion you should stop using both famotidine and omeprazole and start only antacids like gaviscon for GERD.

Tums and Gaviscon are similar to each other. otherwise, I have more positive feedback from Gaviscon.
With regards to DGL licorice, it is a herbal supplement about gastritis, duodenal ulcer, and heartburn.
I would like to ask you about thyroid issues.
Did you ever checked for Thyroid function?
If not please check it because it may cause palpitations and tachycardia similar to your symptoms.

At this point I have stopped both the Omeprazole and the Pepcid as you suggested, and I am researching the best foods to eat (and those to not eat) when it comes to acid reflux.
My palpitations are much less annoying and not as pounding and tiring, and my heartbeat seems to be more steady and even, now that I am not taking either Omeprazole or Pepcid. But food choices to avoid the rebound heartburn are very limited.
I looked up Gaviscon and discovered that it has aluminum in it ~~ that seems like something that wouldn't be good to ingest. Isn't that harmful?

With regards to aluminium it may cause constipation and low phosphate level.
Low phosphate level happens in long term use and with high dosage .
Contipations is rarely happens because Gaviscon has magnesium too that cause diarrhea.
It means that magnesium and aluminium effect compensate each other.
This is why to my opinion you can continue with healthy diet and gaviscon at least before bedtime.

Or, since the acid rebound can happen for long periods of time after not taking Omeprazole, can it also still contribute to arrhythmias for a period of time, even though I am no longer taking it?
I was on Omeprazole for many years, maybe longer than a decade, but my last years were only 10mg. daily. Would that contribute toward my acid reflux healing quicker than if I had been on a stronger dose before I quit taking it?
