1)Your weight is increasing despite of eating less is suggestive of decreased insulin sensitivity of your body and decrease in amount of insulin secreted.Both are age related changes.However insulin sensitivity can again be increased by increasing your physical activity.Try to gradually increase your exercise or activities.This would make body receptors more sensitive to insulin.Insulin would prevent glucose from converting into fat and hence would prevent central obesity.
2)IBS and constipation and other problems are also related to fluctuating body levels of insulin.This is called Gastroperesis.The nerves supplying the intestines starts to tear off as a result of improper control of blood sugar by fluctuating levels of glucose and insulin.
Suggestion,
Consult a proper endocrinologist a you have to go through a series of tests like Serum insulin level,etc .
All problems from gut to weight gain constipation are all related to your body insulin level and sensitivity.

Formation of stools is a complex process.
Intially large volume of watery fluid is formed from which water is absorbed in large intestine giving stools a consistency and bulk.Now if you are having milk which irritates your intestines.Irritated intestines would increase the rate of peristalysis of intestine and hence water would not be properly absorbed causing stools to be like a paste.
Solution
Remove from food whatever irritates you.

For gas take Capsule Omeprazole 40 mg twice daily with tablets of activated charcoal thrice(Both are over the counter).
Take a probiotic ecororn twice daily.
