Question : Hi, I got an appendectomy a little over a month ago and had no problems afterwards. However, over the last week I’ve been have pebble-like hard stools. Should I be concerned?

I don't think you need to be concerned.
The peddle like hard stools you have been having last week don't seem to be related to appendectomy you had over a month ago.
I think that these hard stools may be related to your diet. Having less fiber and water in your diet may have caused hard stools.
You may need to add more fruits and vegetables in your diet, especially kiwis, prunes, lettuces ,whole grain bread and yoghurt.
Remember to drink 8 glasses of water per day.
