Question : Hi,
Just before i ate food at a street side vendor, i momentarily saw the guy putting hia finger inside his mouth, probably trying to clear the stuck food in his teeth.
Then he just dipped his hands in water to prepare my food, which i ate.

Should i be worried about any serious infections his saliva might cause?

As long as you are not symptomatic, nothing to worry. At the most you may have food poisoning nothing else.
