Question : Skin is peeling off on my hand fingers for the past one week.

This is the first time it happened for me.

Current Medication: Applying Vaseline once daily before sleep for both hands completely.

Peeling of skin can be seen in eczema as well as in fungal infection.
Please upload a photograph of your hands, this will help me in giving a closer diagnosis and can help you better.
Keep applying vaseline for now.
