Question: 2 weeks ago: sore throat, fatigue, generally unwell
Today: fatigue, shallow breaths, light headed, cold hands

thanks for the query.

according to your symptoms the possible causes are,
-upper respiratory tract infection:

which will have features like sore throat and the inflammatory reaction might have led to fatigue and general weakness.

if this further extended to lower respiratory tract, causes shallow breaths,

if infection also spread to labyrinth in ear it can cause lightheaded, cold hands etc.

-side effects to drugs like oxycodone and acetaminophen.

-anemia: can also lead to generalized weakness, shallow breaths,lightheaded, cold hands etc.

now you visit general physician undergo systemic examination,
and if needed,
Hemoglobin level, swab from pharynx, chest X XXXXXXX etc, which will possibly find the cause, according to that you can take treatment.
