Hi.
Thanks for your query and an elucidate history.
Noted your history of Gilbert's syndrome, taking medicines for gall bladder stones, cholecystectomy done in Nov last year.
Want to know the precautions to ensure good health.

I would like to know a few things before we can go into further discussion:
-What were the symptoms for which gall bladder was removed or was it just the incidental finding of gall stones?
-Do you have any symptoms or lab reports to say that you are symptomatic?
- What the the food you are avoiding?
- And most important how is your health at the moment? XXXXXXX problems do you have at the moment?

I shall be happy to get the feedback so that I can assist you the most.

Brief Answer:
Avoid fatty, oily and fried foods.

Detailed Answer:
Thanks for your feedback.
You have BMI of 28.7 that comes under overweight (above BMI of 24.9) and you can certainly achieve this.
If you reduce your common salt intake and reduce the stress and anxiety level, you blood pressure may come back to normal. Bit of brisk walking and diet control helps in most of the cases like that of yours.

Since the gall bladder is out of the body, the reservoir of bile is not present. Gall bladder stores all the bile when we are not eating, concentrates it and keeps the stock ready and releases it into the duodenum, the moment the food reaches the duodenum.
Since it is absent now there will be continued flow of bile into the duodenum.
This is the only reason that you have to avoid oily and fatty foods. Other wise you can have anything you like to have in acceptance with your practice of healthy diet.
Just avoid oily, fried and fatty foods.

I hope this explains, please feel free if you have any related query.
