Question: I have recently been diagnosed with alcoholic hepatitis, and am debating on quitting cold turkey or weaning my self from alcohol consumption. Which would you suggest to be the method?

There are rather clear guidelines on this.

Detailed Answer:
The main point is that alcohol withdrawal causes stimulation of the brain. This ranges from hangover up to fatal seizures. generally the initial period with the most danger would be in the immediate period after quitting and would usually be during hospitalization if someone had significant alcoholic hepatitis. Liver enzymes might be slightly elevated with a couple drinks. Liver enzymes might also be elevated without a couple drinks (its pretty common to have slightly elevated liver enzymes due to diabetes, obesity, chronic drinking ... anything that puts on calories that can accumulate inside the liver cause fat in the liver and cause (mild) liver irritation).

if there is noticeable stimulation (elevation of the blood pressure or pulse or changes in thinking or agitation or severe tremor) then initial detox in the hospital with controlled substances that do sedation is indicated. This would be a brief hospitalization but probalby needs full monitoring for 1 to 3 days.

Cold turkey under monitored conditions is not exactly cold turkey since other sedatives related to valium are usually given.
