Brief Answer:
Malabsorption likely

Detailed Answer:
Hello Mrs. XXXX,

I understand your concern for your husbands's health.
His symptoms are suggestive of a malabsorption syndrome.
There can be several causes for malabsorption for which tests would be required.
If he has been having a high fat diet, the absence gall bladder may have a role as the bile is not concentrated. More likely is that he has an overgrowth of bacteria in his gut as the stools are foul smelling and there is some relief with probiotics.
Has he had his blood sugar tested? Also a thyroid function test would be appropriate as hyperthyroidism and diabetes can produce symptoms of loose motions through different mechanisms.
Do get back to me with these results and I shall give you my opinion as to how to proceed further.
Best wishes,
Dr. Noble Zachariah
