I have been experiencing numbness in my arms and hands, sometimes in my feet too. Also kind of disorientation when trying to balance my self while standing. I just had the flu but I never felt these feelings before

Peripheral neuropathy and transverse myelitis are rare but possible complications after viral infections, so, in my opinion you should get evaluated by a Neurologist about these conditions.
Nerve conduction study, MRI of the spine and EMG are necessary also to confirm or exclude these conditions.

I actually need to mention that at the same time of the flu which was last week, I went through the worst anxiety in my entire life. Coupled with severe panic attacks and trembling because of an event that occurred that had me really fearing for my life. I'm still going through it now but not as much, however having some flashbacks still causes me to lose my appetite and become secluded. Not sure if this is connected with the numbness?

It is true that anxiety and stress disorder may cause atypical symptoms such numbness in different parts of the body, however, getting evaluated by a Neurologist even to exclude before mentioned conditions is still necessary, in my opinion.
If no such conditions after the evaluation, then you can peace your mind.
Also, you should discuss about short term treatment about both, numbness and anxiety.
Again in my opinion, amitryptiline use for a couple of weeks may be necessary.
