Question: Hi I am constantly bloated with gas and after I drink water I have to frequently urinate and my stomach is always churning

When I was pregnant six years ago my doctor discovered uterine fibroids and lately I have been waking up with pounding heart in the middle of the night so I guess I am having anxiety attacks

From the history your have provided, your symptoms are suggestive to be due to anxiety and/or stress or perimenopausal problems unless proved otherwise.
Hence I would advise you the following:
Consult another Doctor for second opinion, discuss these points and get basic investigations of blood, stool and urine along with X-ray of abdomen and ultrasound of abdomen. These along with clinical evaluation will give the most probable diagnosis.
If anything specific is found during the course of investigations, you will get a specific treatment.
If all the tests are normal treatment of anxiety/stress and so on will help you to recover fully.

Ok but is churning stomach a part of premenopausal symptoms?

Can be.
If there is anxiety and stress, there can be resultant aerophagia that can cause more gases. More gases cause more peristalsis and since there is more air, you can feel churning.
But as a precaustion, all the relevant tests better be done to see that they are normal.
