Question : After I exercise and within 30 minutes or so, when I start to eat, I begin going into an irregular heart rhythm, extra beats, PVCs, etc.

I would recommend performing an ambulatory 24-48 hours ECG monitoring to investigate if your symptoms are just PVCs or a more complex cardiac arrhythmia.

Besides, as your symptoms are related to eating and physical exertion, I would recommend performing a digestive tract endoscopy to exclude possible causes like gastroesofageal reflux or a hiatal hernia which could lead to this symptomatology.

Some lab blood tests( complete blood count, fasting glucose, blood electrolytes) to investigate for other metabolic causes.
