Question : hi my 7 year old daughter has had a bite on the back of her knee for two weeks. still itches and hurts when you touch it. is it something I should be concerned about?

I have gone carefully through your query. I have checked the attached image. It seems that there is an allergic component associated with the insect bite.

You need to give some antiallergic like cetirizine once daily for the next few days. You may also apply some emollient like calamine lotion or moisturizer like aloe vera lotion.
