There are various reasons for dry tongue especially at night while sleeping including:
- stomach hyperacidity like gastritis/acid reflux
- meds
- Candida infection of the GI tract
- diabetes
- dehydration

Further tests advised to determine the right diagnosis:
- blood electrolytes
- diabetes testing
- urine analysis
- complete blood count
- ENT examination

Until you get the tests done and discuss with your doctor, I advise to:
- increase water intake
- take probiotics
- avoid oily/fried/processed foods
- have your dinner at least 4 hours before going to bed
- keep good hygiene of your mouth
