Brief Answer:
As detailed below.

Detailed Answer:
Hi.
Thanks for your query.
To recapitulate: Female/69 - gastric lap band - removed - tortuous esophagus - awoken with uncomfortable chest pain - not severe - not eating close to bed time as Doctor said surgery was difficult - wants to know what can be done to avoid this ...
Since there is chest pain, albeit not severe, it is imperative to get an EKG always to rule out any cardiac factor.
If the pain is due to esophagitis I would advise you the following:
To get Barium swallow under fluoroscopy to see the real-time flow/obstruction and upper GI Endoscopy to asses the extent of esophageal condition, any obstruction to free flow or any reflux and get the treatment accordingly as per the finding.
Take a PPI like Omeprazole, antacid every three hours particularly when you are on empty stomach.
Soft bland diet with small and frequent meals.
Further management as per the findings of the investigations.

I hope this answer helps you, please feel free to ask for further relevant queries if you feel that there is a gap of communication.
