I have gone through your question and understand your concerns.
Seizures due to NCC if controlled well for 2-3 years can be managed without medication.
The weight gain may be due to hypothyroidism.
The drug dosage required is higher according to weight.
At present if seizures are well controlled, frisium can be tapered and stopped.
Tegrital should be attempted to be tapered after 2 years with a repeat imaging and EEG.
Drugs may also cause mild weight gain but in presence of hypothyroidism, drug should not be held responsible.

I have gone through your MRI report.
According to me, you need to continue medications and get repeat imaging after 1 year from this MRI. Since the lesion is present with superficial location near cortex and associated with perifocal edema, the possibility of seizure recurrence can not be ruled out.
In most cases, the drug may be required for 3 years. NO need for lifelong therapy.
Try to avoid food stuff or fast foods having raw cabbages, salads, spinach. Avoid eating radish or carrots without peeling it nicely.
