Should I Be Worried About The Congested Throat?

I choked on some mountain dew yesterday and I think I coughed it all up. I woke up today really congested (slept in front of a fan). Now all day I have had to clear my throat, almost feel like water/mucus is coming out of my wind pipe. Should I be worried?

Yes, this is a point of worry.
Simply taking mountain due should not cause such a problem.
This indicates a preexisting lower respiratory tract problem or an allergy to the contents of the drink you took.
I would suggest the following:
Get a course of an antihistamine steroids and antibiotic cover.
You can consult an ENT surgeon to get a clinical evaluation and examination to get correct diagnosis and treatment.
Take care and never drink anything that has preservatives.
