Sores In Mouth. What Could Be The Reason For This?

I have several canker sores in my mouth (roof, side of tongue, and between cheek and gum) and there are red striations at the back of my throat. I was thinking that this was caused by my eating a large amount of grains/gluten weekend before last after not eating any grains for almost 2 months, but after seeing the red streaks, I'm not so sure. Do you have any ideas on this? Should I see a doctor?
