What Causes Excessive Salivation After Consuming A Cake Containing Cherries?

The other night I ate gumbo and a piece of chocolate cake containing cherries. Immediately after polishing off the meal my mouth filled with a large amount of saliva. So much in fact I tried to spit it out in a paper hankerchef. I gagged on the amount of saliva and and the saliva came out about a foot long. I wiped it up and embarrassed went to throw the paper hankerchef away. The saliva came filling my mouth and I had to scoot to the bathroom to spit it up in the sink. I grabbed some paper towels there and made for the front door and went outside to spit for several minutes until I quit drooling and creating saliva. What the heck was that? I have never had a reaction to food like that. I am allergic to sulfa...hives. But not salivating.
