Hello there,
The symptoms you have described appear to be what we medically call "reactive hypoglycemia". This means that you are at risk of developing diabetes. What happens is when you eat something normally our body produces insulin so briskly that sugars do not rise to very high levels and are thus under control. In your case what maybe happening is that this brisk phase of insulin secretion is impaired and insulin is released slowly after a lag. In this lag sugars reach such high levels that the insulin produced later is more than normal. So after a couple of hours the insulin suddenly brings down your sugars to lower than normal levels.
You need to split your meals in such a way that you eat in every 2 hours but small meals. So that sugars do not go very high the first time and in 2 hours time when you may hit a low you have eaten again and so no low sugar symptoms either. Try to reduce sweet and carbohydrate content of your meals as this will delay appearance of diabetes. Also include some form of exercise in your daily routine.
Once a year try to get the OGTT(Oral glucose tolerance test) which is a best test to confirm your diabetic status.
Hope this helps.
Take care.
