I work with a you young man age 17 at a restaurant he is a dishwasher,,, and he has broken so many dishes that worries me that he may have signs of a bigger problem,,, he says he doesn t understand why he does this,,, its in his hand one moment and out the next

I read your question carefully and I understand your concern.

If he has weakness during other activities as well it could well be the case of neuromuscular disease, a peripheral neuropathy or myopathy. In order to make such a diagnosis though a neurological exam is essential as there can be many such conditions with variable manifestations and causes, it's not an easy straightforward diagnosis.
Also tests might be needed like nerve conduction studies/electromyography and some blood lab tests.
