I read your question carefully and I understand your concern.
Since neurological causes have been excluded (and I would have said judging by that description unlikely) I would say that the most likely cause would be a metabolic or hormonal issue. I wonder if you have not already been tested for those though since you seem to have seen several doctors.
If not I would recommend some blood tests such as complete blood count, liver and kidney function, fasting glucose and in particular a full electrolyte panel including calcium, potassium and magnesium as well as thyroid function tests.
In case all that has been done and results were normal then I would also consider the possibility of anxiety being at play.
